Curated Culinary tours and workshops in tourism

A 4 day program curated exclusively for students of culinary colleges and tourism management. This itinerary  takes you into the fields and local markets to understand a variety of local seasonal produce through which you will understand agriculture, customs, and practices and the basis of the culinary heritage of Goa. Visit local bakeries and cafes off the tourist map to understand about the colonial influences. Visits interaction and experiences with some of the more niche tourism operators in the state who are pioneers in the fields of adventure, responsible and sustainable tourism in Goa.

 

Brief

  • Sourdough baking workshops with chefs at their kitchen

  • Local Market walk to understand the local produce and its seasonality

  • A presentation by a chef about menu planning based on different seasons and fresh produce

  • Lunch at a local Goan restaurant which is known for its Goan Saraswat cuisine, an introduction into this cuisine and a short talk with the enterprising entrepreneur behind the restaurant

  • A heritage walk and an interaction with the company that pioneers in walk based experiences in Goa, their journey and story

  • A sea kayaking experience and an interaction with the company about setting up adventure tour experiences

  • A craft beer manufacturing unit visit

  • Interactive session with the officials of the Goa tourism, government of Goa about policy planning for an entire state

 

Itinerary

Day 01 | Arrive Goa | Orientation and a Sourdough baking workshop

On arrival assist and transfer to the hotel, check in, there will be a short orientation program explaining the schedule of the following days and later we shall have a half day Sourdough baking workshop with chefs. Later return to the hotel for dinner and overnight stay

 

Day 02 | Goa | All about local produce, menu planning and an introduction to the Goan Saraswat Cuisine

Breakfast at the hotel, proceed to Mapusa market for a local market walk, this walk will help understand the local produce of vegetables and fruits. A talk by a local chef about the different seasons, the various seasonal produce and how Menus are planned based on these seasonal changes. After the market walk we shall travel to a local Goan restaurant which serves the Goan Saraswat Cuisine, have a traditional lunch on banana leaves with local delicacies of seafood and vegetarian options. Post lunch we shall visit Reis Magos Fort and enjoy the stunning views of the ocean and Mandovi river from this fort. Later return to the hotel for dinner and overnight stay

Day 03 | Goa | All about Tourism and some exciting travel companies of Goa

Breakfast at the hotel, proceed for a heritage walk through the narrow lanes of Fontainhas, the heritage precinct of Panjim and later meet with the company that pioneers in this segment, have an interactive session and understand about their journey, the challenges they faced in their entrepreneurial innings and their growth plans. Later lunch at a local restaurant and then proceed to visit an exciting team that operates in the adventure tourism space, have an interactive session and later enjoy a sea kayaking experience with them. Later return to the hotel for dinner and overnight stay

 

Day 04 | Goa - Departure | Craft beer factory and Goa Tourism department visit

Breakfast at the hotel, check out with luggage and proceed to visit a craft beer manufacturing unit which is a start up, understand about the challenges in setting up a distillery and its journey. Later lunch at a local restaurant and proceed for an interactive session with the Goa tourism department, Government of Goa. Meet with the team that sets up policies and overlooks the entire vibrant tourism industry of Goa. Later transfer to the airport or railway station in time for your journey back. 

 

Services will Include

  • 03 nights’ accommodation at a choice of resort as per the budget preferred on sharing basis
